How scientists discovered that electrified chocolate has less fat

A healthier chocolate bar may be upon us. All it took was a little buzz.

Researchers found that running liquid chocolate through an electric sieve actually zapped about 20 percent of the fat out of it. The discovery was a bit of an accident, too. The researchers were working with Mars Inc. to discover ways to help the liquid flow better during the production process. Turns out, electricity can help in that matter. And, as they also realized, it can help it reduce fat. The full story, here on NPR’s The Salt, is quite interesting.

The one catch: The electrified chocolate hasn’t been put through stringent taste tests. So, we’re not sure if we can officially call it the Greatest Thing Ever quite yet.
