Best Bite: Ceviche Trio at Ceviche 41

Summer is here, and we’ve found an antidote to the rising temperature in the cuisine of coastal Peru. At the new, authentic Ceviche 41, the focus is on fresh seafood with seven made-to-order varieties of its namesake chilled dish. Opt for the Trilogia de Ceviche, which combines three variations on one plate for a refreshing appetizer: The white fish is cured the traditional way with ample lime juice and cilantro; a yellow-tinged version gets its color from the infusion of sweet bell peppers; and the last kicks it up a notch with red rocoto pepper. Peruvian corn and sweet potatoes on the side temper the heat, and choclo (toasted corn kernels) add a salty, satisfying crunch.
