Great love affairs start with champagne (or so we like to agree with Honoré de Balzac)—and we’ve been longing for the arrival of Cavo, a sparkling-centric lounge opening this month, for more than two years. Its artfully curated cocktail lists, one with bubbles and one without, have us swooning, and we’re head-over-heels for the Po Pazzo (“a little crazy” in Italian). A riff on a Negroni Sbagliato, Prosecco flirts with fiery-hued Campari but sweet vermouth is replaced by Disaronno Originale, an amaretto recipe that predates Balzac’s musing by a few hundred years. And the final kiss of orange bitters has us seeing stars.
