In my book, you can never, ever go wrong with prosciutto. San Daniele, di Parma, di Carpegna—they’re all about as magically delicious as you can get (sorry, Lucky Charms).
And at Caffe dell’ Amore, the intimate Tuscan dinner spot near downtown Naples (it's directly across from Lowdermilk Park, but it can be easy to miss if you don’t circle all the way around the parking lot), the salty sheets become crisp receptacles for a savory ricotta-spinach blend. Oven-baked and easy to pop in your mouth, the cups crafted from prosciutto di Parma have a final flourish delivered by a house-made San Marzano tomato sauce, with a gentle brushstroke on top and a pool below.
It was hard to get a good picture, one that does this ingenious cousin of ravioli justice, as the lighting is purposely dim. (It practically begs you to linger in the Old World gold-accented space over a bottle or two of Chianti.) But it’s one dish this hog-wild lover of all things p-i-g went downright crazy for at first bite. And I’m in good company—as the restaurant is entering its 15th season, this has been one of its all-time best-sellers.
